Start with one whole pork belly like this one!
Purchase our all-natural and organic bacon cure.
Rub cure on belly and place in ziplock bags.
Place in refrigerator for 10 days, turning once a day.
Remove from ziplock bag, pat dry and return to refrigerator for one more day to allow pellicle to form.
Remove from refrigerator and finish in oven at 200° F until internal temperature reaches 150° F.
(Bacon can be finished similarly in a smoker if available.)
Place back in refrigerator to cool, then slice as desired.
Cook slices in the oven at 350° F for 20 minutes in a cookie sheet on a cooling rack.
