Himalayan Salt Block Cooking & Black Rice Risotto – Sonoran Living Live – October 21, 2013

It was again our pleasure to provide a salt-centric meal in advance of our Salt Smitten dinner event!

We present Salt Block’d Scallops, Salt Block’d Peaches and Forbidden Rice Risotto in three short segments.

Part 1

(Tip:  Risotto requires constant stirring.  This risotto was completed in 32 minutes without pre-soaking the rice.)

 

Part 2

(Tip:  Always use unsalted sweet cream butter for that beautiful brown butter note in the flavor profile!)

 

Part 3

(Tip:  Select a sweet but tart coulis to balance the sweet and savory notes of the entire dish if you select a different protein or fruit combination.)
